• You can't have won Epona yet.

Instructions

1. Go to Lon-Lon Ranch as Adult Link.
2. While standing near the corral, play Epona's Song. She will appear inside the corral and run towards you.
3. Keep a little distance away from the fence, and as she approaches it, walk along the fence and away from her, so that she follows you along the fence.
4. Keep making her follow you and eventually she should stop (you may need to let her get close before she does).
5. When she stops, she should be side on to the fence. Walk up beside her and the A command should change to "Climb".
6. Press A.

Result

Link will mount Epona through the fence, allowing you to use her without having won her off Ingo. Unfortunately, there is no way to escape with her -- the corral's gate is closed, and you can't jump the fence on it.
