Instructions

1. As Child Link, equip the Deku Shield.
2. Press and hold R to make Link crouch with the shield in front of him.
3. Still holding R, press Start and equip the Hylian Shield.
4. Still holding R, press Start to unpause the game.

Result

Link will be holding his arm out in front of him, but there will be no Deku Shield on it, and the Hylian Shield will be on his back.

Notes

This can be done the other way around: by swapping from the Hylian Shield to the Deku Shield, you can get Link to hold the Deku Shield out in front of him like normal, while hovering a little bit off the ground.
